Today I'm making my husband's favorite meal, my famous smothered chicken. There's so many of you guys ask me for the recipe, so here you go. So ingredients. Let's talk about ingredients. This is all you need. This is so easy to make. All you need is a little bit of oil, you need some onion powder, garlic powder, paprika, some type of Cajun seasoning. I like to use Slap Ya Mama. The Lipton onion soup mix and your Creole "Holy Trinity" mix. So this is the Creole mix. It is a mixture of chopped onions, green celery, bell pepper, green onion and a little bit of garlic. You wanna make sure you have a good pot. I use Magnalite pots. These pots cannot be found anywhere anymore. So many people ask me can they buy mine. No, it's not for sale. This will be a family heirloom. But anyway, so you wanna start off by covering the bottom of a little bit of vegetable oil. Then you wanna take your Creole mix, Holy Trinity. I buy mine already pre-mixed from H-E-B, but you guys can cook this up if you want to. Let that cook down for about 10 to 15 minutes while you season your chicken. So I start off with my Creole seasoning mix and again, don't use salt and pepper because the Creole seasoning mix already has salt and pepper in it. So add a hefty amount of the onion powder. Same thing for garlic powder. I really feel like you can never put too much onion powder, garlic powder or paprika. Once your vegetables get soft, just mash them down. And then from there, you add chicken. You gonna let the chicken brown on each side for like 5 to 10 minutes, then we'll add our gravy. And we don't have to touch this for literally an hour. So I take a cup of water, pour it into my Lipton onion soup mix. Then I take two, three scoops of just regular white flour. This is how you make the gravy. Give it a good mix, make sure it's all mixed together. Then you literally just pour this all over the chicken. So it's been an hour later. My chicken has been cooking, simmering on medium low. And here are the results. You just want to cook it down until it's tender. But look at that. It's my husband's absolute favorite thing to eat. Ready! The food is ready!
