Quick Easy One-Bowl Banana Cornbread Cinnamon Roll Snack Cake

I can’t wait for you all to try it. 🍌banana cornmeal cinnamon roll snack cake Cinnamon Roll Topping * 1/3 cup packed light brown sugar * 2 tbsp granulated sugar * 1 tbsp + 1 tsp all-purpose flour * 2 tbsp finely ground yellow cornmeal * 2 tsp ground cinnamon * 1/8 tsp ground nutmeg * Pinch fine sea salt * 3 tbsp + 2 tsp softened butter * 1/2 tsp vanilla bean paste Instructions 1. Whisk dry ingredients. 2. Mix in butter and vanilla until a soft, spreadable paste forms. 3. Set aside. Snack Cake * About 2 large bananas, mashed smooth (1 cup) * 3/4 cup packed light brown sugar * 1/4 cup granulated sugar * 2/3 cup neutral oil * 3/4 cup + 2 tbsp plain unsweetened yogurt, room temperature * 1/2 cup + 2 tbsp milk, room temperature * 2 tsp vanilla bean paste * 1/2 tsp apple cider vinegar * 1 3/4 cups + 2 tbsp all-purpose flour * 2/3 cup finely ground yellow cornmeal * 1 1/2 tbsp cornstarch * 2 tsp baking powder * 1/4 tsp baking soda * 3/4 tsp fine sea salt * 1 tsp ground cinnamon * 1/8 tsp ground nutmeg Instructions 1. Preheat 350°F. Line a 9x9 pan. 2. Whisk bananas, sugars, oil, yogurt, milk, vanilla, and vinegar until smooth. 3. Add remaining ingredients and whisk just until combined. 4. Spread into pan. 5. Gently spread cinnamon topping over batter, covering as much of the surface as possible. 6. Bake 45-50 min, checking at 40. Bake until the center reaches 200-203°F, no longer jiggles, and a toothpick comes out with moist crumbs. 7. Cool 10 min. Cream Cheese Frosting * 8 oz cream cheese, room temperature * 1 1/2 cups powdered sugar, sifted * 1 tsp vanilla bean paste * Pinch fine sea salt * Milk, if needed (1 tsp at a time) Instructions 1. Poke shallow holes over the warm cake about 1-1 1/2 inches apart. 2. Whisk cream cheese, powdered sugar, vanilla, and salt until smooth. 3. Add milk if needed until thick but spreadable. 4. Spread over warm cake, letting it settle into the holes and cracks. 5. Rest 15-20 min before lifting from the pan. 6.
