Welcome back to Homemade ish Test Kitchen. And yesterday we tested baking soda versus baking powder. And let me tell you, the difference is not big, but it is a big deal in baking. Let's break it down. What is baking soda? It's actually pure sodium bicarbonate, which means it needs acid to be activated. Baking powder already has acidity built into it. So things that baking soda are activated by are brown sugar, lemon juice, and honey too. Baking soda creates a stronger spread, a more dense, chewier cookie. Baking powder on the other hand, is activated on its own. So it gives it a more lift, a softer cookie, almost cake-like reason. The reason why I chose baking soda in my baking mix homemade dish is because it gives you a flatter, and crinkly top. That's cookie.
