No-Bake Pistachio Kadayif Cheesecake | Viral Dubai Chocolate-Inspired Cheesecake Recipe 💚✨ #pistachiocheesecake #cheesecake #nobakecheesecakes #pistachio #desserts 📖 Ingredients Biscoff Base * 250g Biscoff biscuits, crushed * 90g unsalted butter, melted Crunchy Pistachio Kadayif Layer * 200g toasted kadayif (kataifi pastry), crushed * 4 tbsp pistachio spread * 2 tbsp unsalted butter, melted * Pinch of sea salt Cheesecake Filling * 300g Philadelphia-style cream cheese * 250g mascarpone * 150ml cold double cream * 40g icing sugar * 4 tbsp pistachio spread * Seeds from 1 vanilla pod (or 1 tsp vanilla extract) * 1 tbsp condensed milk Topping * 200g pistachio spread, gently melted * 50g crushed pistachios * Dried rose buds, for decoration (optional) 👩🏻‍🍳 Method Make the Biscoff Base 1. Crush the Biscoff biscuits into fine crumbs and mix with the melted butter until evenly coated. 2. Press the mixture firmly into the base of a 9-inch springform tin. 3. Chill for 20 minutes. Prepare the Crunchy Pistachio Layer 1. Add the toasted, crushed kadayif to a bowl. (If using ready-to-toasted kadayif, simply crush it slightly before mixing.) 2. Stir in the pistachio spread, melted butter and a pinch of sea salt until fully combined. 3. Spread an even layer over the chilled Biscoff base, pressing down gently. 4. Chill for another 20 minutes. 3. Make the Cheesecake Filling 1. Beat together the cream cheese, mascarpone, icing sugar, 3 tbsp pistachio spread, vanilla and condensed milk until smooth and creamy. 2. In a separate bowl, whip the cold double cream to stiff peaks. 3. Gently fold the whipped cream into the cheesecake mixture until fully combined. 4. Assemble 1. Spoon the cheesecake filling over the crunchy pistachio layer. 2. Smooth the top with a spatula. 3. Cover and chill for at least 6 hours, or preferably overnight, until fully set. 5. Decorate 1.
