Italian Love Cake! Italian Love Cake is easy and magical! Italian Love Cake (cake mix recipe) Ingredients: • 1 box chocolate cake mix (15.25 oz) • 1 tsp instant espresso powder • 2 c milk, divided (room temperature) • 8 eggs, divided (room temperature) • ½ c butter, melted • 32 oz ricotta cheese • ½ c sugar • 1 tsp vanilla bean paste or extract • 1 container whipped topping, thawed (12 oz) • 1 packing instant chocolate pudding mix (3.4 oz) • ½ c shaved semisweet chocolate (optional) Instructions 1. In a bowl combi I told you there would be magic Look at those layers Start with one box of chocolate cake mix Sift it to get out all the lumps and make a better batter My mix has chocolate chips Put them back in if you want add one teaspoon instant espresso powder Give that a quick mix This make sure everything is evenly distributed before you add the other ingredients Add one half cup butter One cup milk And four eggs Mix it all together Cover your bowl and hydrate your batter for at least 15 minutes Now set that aside while the cake batter hydrates, let's make the ricotta cheese mixture Add 32 ounces of ricotta One half cup sugar one teaspoon vanilla bean paste or extract and four eggs Mix until smooth grab your prepared baking dish Get your cake batter and give it a quick mix Then pour the batter into your cake pan Spread that batter out Pour your ricotta mixture over the cake Spread that evenly over the cake batter Now when you take this out the oven, the ricotta mixture is going to be at the bottom of your cake chocolate cake is going to be on top, so you'll see a little magic happen Now get your cake in the oven and watch the chocolate cake on top When your cake is cool, add your frosting I put little bits of chocolate in my frosting, that is optional Spread your frosting on the cake I love a good easy cake
