No. 1 best seller for over 45 years classic cheesecake topped with glazed fresh strawberries and whipped cream Recipe Graham Cracker Crust Ingredients: • 1 ½ c graham cracker crumbs • 4 tbsp sugar • 7 tbsp melted butter Cheesecake Filling Ingredients: • 32 oz cream cheese (4- 8 ounce packages), room temperature • 2 c granulated sugar • 2/3 c sour cream, room temperature • 1 tbsp vanilla extract • ½ tsp salt • 4 eggs beaten, room temperature Strawberry Topping Ingredients: • 2 pints strawberries • 1 tsp cornstarch • ¼ c sugar • 1 tbsp lemon juice Instructions: 1. Make cheesecake crust: Combining sugar and graham cracker crumbs well, then add melted butter, stir until all crumbs are wet. Pour crumb mixture into a prepared 9-inch springform pan and press crumbs along the bottom and up the sides of the pan. Refrigerate crust. 2. Make cheesecake batter: In a bowl mix cream cheese with electric mixer until smooth (Philadelphia preferred for less cracking). 3. Add sugar and combine with cream cheese, mix until smooth. 4. Add sour cream, vanilla extract, and salt – mix on low speed until well combined 5. By hand with a silicone spatula, add eggs a little at a time (to minimize the amount of air in the batter thus minimizing cracking) mix until combined. 6. Preheat oven to 310. Place a shallow baking pan on the bottom rack of the oven and fill halfway with boiling water (water bath). 7. Remove crust from fridge, fill with cheesecake batter. Seal outside edges of springform pan with foil (optional). Place springform pan on baking sheet to ensure any possible leaks are caught. 8. Bake cheesecake for 55-65 minutes 9. Turn the oven off and let cheesecake stand in the oven for 30 minutes with the door open at least 4 inches. 10. Remove cheesecake from oven and allow to cool for 15 minutes, then use a knife to loosen crust from sides of the pan. Continue to cool for another 1 hour at room temperature before transferring to the fridge. Chill overnight. 11. Make Strawberry Topping: clean destem, and puree 1 pint of strawberries. Add puree, sugar, cornstarch, and lemon juice to saucepan over low heat. Allow mixture to cool for 5-10 minutes and then strain. Allow to cool to room temperature. 12. Before serving add strawberry topping to cheesecake. Get 1 pint of strawberries, clean, dry, cut off stem to create flat surface. Add fresh strawberries to bowl and pour strawberry glaze over strawberries until fully coated. Place strawberries cut side down over top of cheesecake.
