Bundt Pan Hack! How to Roast Chicken in a Bundt Pan Ingredients and needs: • Whole chicken (3-5 pounds) • 2-3 c cut up vegetables (ex. potatoes, carrots, onions, bell peppers) • Olive oil or melted butter • Seasonings of choice • Aluminum foil • Bundt pan • Baking sheet Instructions: 1. Prep chicken by washing and patting dry, place on wire rack on top of baking sheet and refrigerate overnight uncovered to finish drying. 2. Prep the pan: Cover hole in bundt pan tightly with foil to prevent chicken from dripping in oven. Spray pan with cooking spray, place bundt pan on baking sheet for extra protection from chicken drippings. Preheat the oven to 400 or 425 degrees. 3. Place oil or butter on the vegetables, toss, add seasonings, toss. Spread vegetables evenly along the bottom of the bundt pan. 4. Rub oil or butter all over the chicken. Season the chicken all over, including the cavity, under the wings and drums, and under the skin. Stuff the cavity with herbs, garlic, or lemon for additional flavor (Extra points for flavor injections). 5. Carefully place the chicken cavity straight down over the foil-covered center tube of the bundt pan. The chicken should be standing upright with the legs resting on top of the vegetables. 6. Place the chicken and vegetables in the oven and bake for 50-70 minutes or until the thickest part of the thigh reaches 165 degrees. 7. Out the oven allow the chicken to rest in the pan for 10-15 minutes before transferring to a platter with the vegetables.
