Canning 101 beginner series: the basics of pressure canning. A few things to note that I didn’t cover- Not all pressure canners have a gauge. You simply know you’re at the correct weight by the way you weight rocks or jiggles. It should maintain a steady consistent rock/jiggle. There are also some canners that don’t have a weight or jiggler at all - you simply have a dial gauge that you watch and adjust the heat on your stove to maintain correct pressure.
