The reason why Houston food is so special is because of our diversity and creativity. This is Khói Barbeque, located in Houston, Texas. Their food is the bridge between Vietnamese cuisine and Texas barbecue. I grew up with Theo who helps his brother run Khói Barbeque. It's truly inspiring to see them bring Vietnamese cuisine to the people. They're located on 515 Patton Street from 11 AM to 3 PM on Saturdays and Sundays. I came a bit late so a couple of their menu items have already been sold out. I ended up ordering their Beef Rib Curry, Brisket Pho, Saigon Spares, and Bo La Lot Sausages. The food is just as good as it looks. I got started with the Brisket Pho recipe is from their mom. They've added their own twist with the barbecue brisket. They use smaller pho noodles, broth leans on the sweeter side. Brisket is extremely tender and adds a nice flavor to the broth. Next up, the Saigon Spares. These are wagyu beef back ribs cooked over direct heat. You also got the Bo La Lot Sausages. You can definitely taste the Vietnamese flavors in this with the betel leaves. I saved the best for last. Their Beef Rib Curry 10/10. It had a sweetness to it that paired really well with the savoriness and the smokiness of the ribs and rice. As you can see, the Texas heat was killing me, but it was worth it. 9.5 out of 10.
