Who knew making summer sausage at home could be that easy. Start with ground beef. And in goes tender quick salt. It has to be this salt for it to work, but it's easy to find. Add it in along with mustard seed, garlic powder, liquid smoke, pepper and a little sugar. Mix it up really well. Divide this mixture in half and roll it into two logs. Wrap it in plastic and then refrigerate for at least 24 hours. 24 hours later, what we're working with. To unwrap them, place them on a baking sheet and bake them at 275 degrees for two hours. Then you have to let it cool completely and refrigerate until you're ready to serve. Here goes nothing. I got to confess. I did leave it in a little too long, but I think it's fine. Ooh, looks better than what comes in the package. Wow. Here goes nothing. The flavor in that is delightful. Ten times better than that grocery store shelves for God knows how long.
