Let's see if an Aldi's brisket is any good. I got this three and a half pound $25 brisket from Aldi's. Going to get it seasoned up. I got about six people that I need to feed and with some sides to go with it, I think this should be a pretty solid meal. Taking my first look at this, it actually doesn't look too bad. It's got even thickness all around, got a good fat cap. Looks like maybe one part that's a little hard, but don't need to trim it. Comes pre-seasoned, which I don't love, but we'll toss on a little bit more salt, pepper, garlic on there and should be a pretty quick process. So I'm going to go ahead with my all reliable, just a little bit of mustard hot sauce combo for the binder. Some freshly ground black pepper, then a little bit of seasoned salt and garlic powder. We'll get it tossed in the fridge, let it rest overnight, and then get it tossed on first thing in the morning. All right, so it's about 8:00 the next day. Let's get this puppy popped on the smoker. We're going to go fat side down today. Get the pellets in, and get her cranked on. Okay, so it is now 3:00. Just pulled it off. We're going to wrap it. I think we're going to go foil boat, because bottom, which is this actually the fat cap, has some good bark. Top, not so much, so I want to protect the bottom. Well, I had a little bit too much aluminum here, but so go with that, get her back on the smoker, and hopefully within two hours, because that's when I need to have this off to rest, she's done. So brisket is done. Not quite the same, not quite the same jiggle that I'm used to, but it's probe tender. Some tallow down, and get her wrapped up and let it rest. So tallow on top, too. All right, let's see what we're working with. And for the money shot. Looks decent for an Aldi's brisket. Hope to see how it tastes. So may have overcooked it a little bit, but it's pretty fall apart tender. And it tastes good, so that's all that matters. So $25 brisket, two thumbs up for me.
