My boyfriend’s all-time favorite dinner. Crispy chicken cutlets over the creamiest tomato basil pasta… this one never disappoints! What you’ll need: [CUTLETS] 1.5 lbs chicken breast 2 eggs Breadcrumbs Salt, pepper, garlic powder & onion powder [TOMATO BASIL PASTA] 1 box spaghetti 1 onion, diced Olive oil 1 tbsp flour 2 tbsp tomato paste 1 cup chicken broth 1 cup milk or cream Sun-dried tomatoes or sun-dried tomato pesto ½ cup Parmesan cheese ¼ cup reserved pasta water Fresh basil 1. Slice the chicken breasts in half and pound them to an even thickness. Season with salt, pepper, garlic powder, and onion powder. Dip each piece into the eggs, then coat with breadcrumbs. Pan-fry in oil for about 4 minutes per side, or until golden brown and cooked through. 2. Cook the spaghetti according to the package directions. Reserve ¼ cup of the pasta water before draining. 3. In the same pan used for the chicken, cook the diced onion for about 5 minutes. Stir in the flour, then the tomato paste, and cook for 2 minutes. Slowly whisk in the chicken broth, followed by the milk or cream. Let simmer for a few minutes, then stir in the sun-dried tomatoes (or pesto), Parmesan cheese, and fresh basil. 4. Add the cooked pasta and reserved pasta water to the sauce. Toss until everything is well coated and let it sit for a few minutes to thicken.
