Welcome to the workshop. That banquet and long table? We sat there twice in two months. So I ripped it out and built the workspace I actually needed — bookcase, pegboard, and enough storage to finally get my cast iron out where I can see it. Here's the thing about me: I see a pan, it gives me an idea, and that idea moves me through the whole dish. Sometimes the cooking starts with the equipment. So the equipment needs to be visible. My favorite hack in here cost under $100: a half sheet pan rack from any restaurant supply store. It stores my baking trays, but in professional kitchens we also use these as cooling racks — so when the kitchen is raging on a holiday weekend, food comes off the counters and cools on the rack while I keep moving. Double duty, zero countertop chaos. What happens in here next? Reading. A lot of fermentation (sorry, counters). And finally — noodles. You've been at me about it for a while. No more excuses.
