Zucchini Meatballs? 👀🇮🇹 In Italy, zucchini somehow find their way into everything during the summer… even meatballs! These crispy zucchini meatballs are one of my favorite ways to make the most of fresh summer zucchini. Instead of making zucchini pasta, give these a try. Ingredients 1 lb (500g) zucchini, cut into small cubes 2 eggs 1 cup (80g) grated Parmigiano Reggiano 1 1/2 cups (200g) plain breadcrumbs 1 garlic clove, crushed Fresh parsley chopped Fresh basil Salt Black pepper Extra virgin olive oil Instructions: 1. Heat olive oil in a large skillet over medium heat. Add the zucchini and sauté for 8–10 minutes until soft. Let cool slightly. 2. Transfer the zucchini to a large bowl. Add the eggs, Parmigiano Reggiano, breadcrumbs, garlic, parsley, salt, and pepper. 3. Mix until well combined. If the mixture is too wet, add a little more breadcrumbs. 4. Lightly wet your hands with water and roll the mixture into golf ball-sized meatballs. 5. Heat a generous layer of extra virgin olive oil in a skillet over medium heat. 6. Fry the meatballs for a few minutes until golden on all sides. 7. Finish with freshly grated Parmigiano Reggiano and fresh basil. #zucchini #EasyRecipe #fyp
