Tender chicken, roasted potatoes, crispy bacon, ranch seasoning, and melted cheddar come together in one hearty casserole that is perfect for a family dinner. Ingredients For the Chicken & Potatoes • 1½ lbs chicken breast, cut into bite-size pieces • 1½ lbs baby potatoes, quartered • 2 tbsp olive oil • 1 tsp smoked paprika • 1 tsp garlic powder • ½ tsp onion powder • Salt and black pepper to taste For the Creamy Ranch Sauce • 2 tbsp butter • 3 garlic cloves, minced • 1 cup heavy cream • ½ cup chicken broth • 4 oz cream cheese • 1 tbsp ranch seasoning • ½ cup grated Parmesan cheese For Topping • 1½ cups shredded cheddar cheese • 6 slices bacon, cooked and crumbled • 3 green onions, sliced • 2 tbsp chopped parsley Instructions 1. Preheat the oven to 425°F (220°C). 2. Toss the potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. 3. Spread the potatoes in a baking dish and roast for 20 minutes. 4. Meanwhile, season the chicken with salt, black pepper, and a little smoked paprika. 5. Heat the remaining olive oil in a skillet over medium-high heat. 6. Add the chicken and cook for 5–6 minutes until lightly golden. It does not need to be fully cooked yet. 7. Remove the chicken and set aside. 8. Melt the butter in the same skillet over medium heat. 9. Add the minced garlic and cook for about 30 seconds. 10. Pour in the chicken broth and heavy cream. 11. Add the cream cheese and ranch seasoning. Stir until smooth. 12. Add the Parmesan and simmer gently for 2–3 minutes until the sauce thickens slightly. 13. Remove the potatoes from the oven. 14. Add the chicken pieces to the baking dish and pour the creamy ranch sauce evenly over everything. 15. Sprinkle the shredded cheddar and half of the crumbled bacon over the top. 16. Return to the oven and bake for another 15–18 minutes, until the chicken is fully cooked and the cheese is bubbling. 17. Broil for 1–2 minutes if you want a more golden cheesy top. 18.
