🥩 STEAK + SWEET POTATO FRIES & SPICY GREEN SAUCE. If youre trying to eat healthy, this is one of the meals I have on heavy rotation thats helped me lose over 150lbs, and stray on track. It’s as easy as it gets, and SO good. Feel free to use NY strip, ribeye, or hangar/skirt steak. I love using the air fryer here because it takes only 10 minutes at 400F, but you can also cook these up on the grill or cast iron pan. Here’s how I made it: 1.Season 2 NY strip steaks generously with salt and pepper, 1/2 tbsp onion powder, 1/2 tbsp chile lime seasoning, and 1/4 tsp cayenne pepper. Lhen let them sit at room temperature while you prepare everything else. 2.Preheat your oven at 425F. 3.Grab 2 medium sweet potatoes. Cut them with a sharp knife into fry shapes. Add your sweet potato fries to a bowl, coat with 1 tbsp olive or avocado oil, salt, pepper, 1 tbsp onion powder, and 1 tbsp sweet paprika. Coat it evenly. Transfer to a lined tray, then pop in the oven at 38-40 mins. 4.While the fries are going, make your spicy shred sauce. Grab a small food processor, add 1 cup greek yogurt, 2-3 tbsp mayo, a large handful of cilantro, 1 green onion, half a jalapeño (deseed if you like it less spicy), the juice of 2 limes, a generous pinch or two of salt, and some pepper. Process well, taste, and adjust. 5.Airfry your room temperature steaks at 400F for 10 minutes for medium rare, then let them rest for 5 mins before slicing. I like to finely chop some cilantro and mix it in with the steak juices to top my steaks for a nice lower calorie flavor profile. 6.Remove your sweet potato fries from the oven, top with a shaving of fresh parmesan, some oregano, then plate it up with your steak, some of the green sauce, and ENJOY!
