your new staple dinner 💌 whole foods + high protein (low-ish effort, unreal flavor !!) steak & sweet potato with garlic cream sauce 🍽️ here’s the recipe - 1. Roast the sweet potatoes. Heat oven to 425°F. Prick each sweet potato a few times with a fork, place on a sheet pan, and roast whole until completely tender, about 45–55 minutes depending on size. 2. Season the steaks. Pat the steaks very dry and season both sides with salt. Let them come to room temp. 3. Sear the steaks. Heat about 2 tbsp oil in a heavy skillet over medium high heat. Sear about 5 minutes per side for medium. (I take mind off when internal temp hits 125°). Let the steaks rest! 4. While the steaks rest, make the garlic cream sauce. In the same skillet over medium heat, melt 2 tbsp butter and cook 2 tbsp minced garlic until fragrant, about 1 minute. Add 1 tbsp flour and mix. Pour in about 1/2 cup beef broth, then 1/2 cup half and half or cream, simmer to thicken slightly, then stir in 1 tbsp parmesan until smooth. Season with salt and pepper as needed. 5. Remove sweet potato from oven and slice down the center. Spread the sweet potato mash as a base on each plate, fan the sliced steak on top, and drizzle with the garlic cream sauce.
