Easy lasagna soup recipe: 🍅🥣🧀 Serves 6–8 Ingredients Soup * 1 tbsp butter * 1 small onion, diced * 2 stalks celery, diced * 1–2 bell peppers, diced * 1 lb ground chicken * 1 lb ground sausage * 4 cloves garlic, minced * 1 tbsp tomato paste * 1 (24 oz) jar marinara sauce * 6–8 cups chicken broth (depending on how soupy you like it) * 7–8 lasagna noodles, broken into pieces * 1 cup heavy cream * ¼ cup fresh parsley, chopped * 2 tbsp fresh basil, chopped * 1 tbsp Italian seasoning * 1 tbsp dried basil * 1 tbsp garlic powder * 1 tbsp onion powder * Salt and pepper to taste Ricotta topping * 1 (15 oz) tub ricotta * ½ cup mozzarella * ½ cup Parmesan * 2 tbsp parsley * 2½ tbsp basil * Salt and pepper to taste Instructions 1. Melt the butter in a large pot over medium heat. 2. Add the onion, celery, and bell peppers. Cook for 5–7 minutes, stirring occasionally, until softened and slightly golden. 3. Add the ground chicken and sausage directly to the vegetables. Cook until completely browned, breaking it up as it cooks. 4. If there’s a lot of grease, drain off the excess. 5. Add the garlic and tomato paste. Cook for 1–2 minutes, stirring constantly. 6. Pour in the marinara and broth. Add the Italian seasoning, dried basil, garlic powder, onion powder, salt, and pepper. Stir well. 7. Bring to a gentle boil, then add the broken lasagna noodles. 8. Reduce to a simmer and cook for 10–14 minutes, or until the noodles are tender. 9. Turn the heat to low and slowly stir in the heavy cream. Don’t let the soup come to a hard boil after adding the cream. 10. Turn off the heat and stir in the fresh parsley and basil. 🧀 Ricotta topping Mix the ricotta, mozzarella, Parmesan, parsley, basil, salt, and pepper together. Spoon it right onto each bowl of soup and finish with extra Parmesan and fresh basil. Note: If you prefer, you can brown and drain the chicken and sausage first, remove it from the pot, then cook the vegetables and add the meat back in.
