halloween baking has officially taken over my kitchen. 🤭 Easy vampire cheesecake cookie recipe: Makes: 8 large cookies Cheesecake Filling * 8 oz cream cheese, softened * ½ cup sugar * 2 tbsp powdered sugar * 2 tbsp sour cream * ½ tsp vanilla * Red food coloring Cookie Dough * ½ cup butter, softened * ½ cup brown sugar * ⅓ cup sugar * 1 egg * 1 tsp vanilla * ⅓ cup cocoa powder * ½ tsp baking soda * ¼ tsp baking powder * ½ tsp salt * 1½ cups flour * ¼ cup milk (add a splash more if needed) * Black food coloring * ¾ cup mini chocolate chips For the Drizzle * White chocolate, melted * Red food coloring * 1 tsp coconut oil (optional) Instructions 1. Make the filling: Mix the cream cheese, sugars, sour cream, vanilla, and red food coloring until smooth. Scoop into 8 small portions and freeze for at least 1 hour. 2. Make the dough: Cream together the butter, brown sugar, and sugar. Mix in the egg and vanilla. Add the cocoa powder, baking soda, baking powder, salt, and flour. Stir in the milk until a soft dough forms, then mix in the black food coloring and fold in the mini chocolate chips. 3. Fill the cookies: Divide the dough into 8 equal portions. Flatten each one, place a frozen cheesecake filling in the center, and wrap the dough around it, sealing the edges. 4. Chill: Freeze the stuffed cookies for 5–10 minutes (or refrigerate for about 30 minutes). 5. Bake: Bake at 350°F for 13–15 minutes. Let the cookies cool on the baking sheet for 10–15 minutes. 6. Decorate: Stir a little red food coloring into the melted white chocolate (add the coconut oil if needed to thin it).
