Easy witch cheesecake cookie recipe: Makes 10–12 large cookies 💚 GREEN CHEESECAKE FILLING • 4 oz cream cheese, softened • ½ cup powdered sugar • ½ tsp vanilla • Green gel food coloring 🖤 COOKIE DOUGH • ½ cup (1 stick) butter, softened • ¾ cup brown sugar • ½ cup white sugar • 1 egg • 1 tsp vanilla • ½ cup cocoa powder or black cocoa powder • 1 cup all-purpose flour • 1 tbsp cornstarch • ½ tsp baking soda • ¼ tsp salt • ½ cup chocolate chips • Black gel food coloring, optional 💜 TOPPING • ½ cup white chocolate • Purple gel food coloring • ½ cup white chocolate • Green gel food coloring • Halloween sprinkles Directions 1. Make the cheesecake filling: Mix the cream cheese, powdered sugar, vanilla and green food coloring until smooth. Scoop 1 tablespoon portions onto parchment paper and freeze for 30–45 minutes. 2. Make the cookie dough: Beat the butter, brown sugar and white sugar until creamy. Mix in the egg and vanilla. Add the cocoa, flour, cornstarch, baking soda and salt and mix until a thick dough forms. Stir in the chocolate chips. Add a little black gel food coloring if you want the cookies extra dark, or use black cocoa powder. 3. Stuff the cookies: Divide the dough into 10–12 portions. Flatten each piece of dough, place a frozen cheesecake filling in the center and completely wrap the dough around it. Roll into a ball and place on a parchment-lined baking sheet. 4. Bake: Bake at 350°F for 10–12 minutes. The edges should be set but the centers should still look soft. Let cool on the pan for 10 minutes. 5. Decorate: Melt the white chocolate. Mix some with purple and green gel food coloring.
