🍚🍗 MAKLOUBA — A Classic Dish from Bilad al-Sham 🇱🇧🇵🇸🇯🇴🇸🇾 Maklouba, meaning “upside down,” is a beloved traditional dish from Bilad al-Sham, enjoyed across Lebanon, Palestine, Jordan, and Syria. Every family has their own version—this is mine. ❤️ ⸻ 🛒 INGREDIENTS 🍗 Chicken & Seasoning • 10–12 chicken leg quarters • 2 onions, sliced • 1½ cups ghee • ½ cup corn oil • 1 tbsp salt • 1 tbsp black pepper • 1 tbsp seasoning salt • 1 tbsp Vegeta or chicken bouillon • 1 tsp lemon pepper • 2 tsp cumin • 1 tsp allspice • 1 tsp garlic powder • Onion powder, to taste • Chopped parsley 🌿 🥔 Vegetables • 4–5 large potatoes, sliced • 1 head cauliflower • Chopped carrots • Eggplant (optional 🍆), salted and pre-fried 🍚 Rice • 2 cups parboiled long-grain rice • 2 cups basmati rice (parboiled or regular) • 6 cups water • ¼ cup butter 🧈 ⸻ 👩🍳 METHOD 1️⃣ Sauté the onions Cook onions in ghee and corn oil until golden brown. 🧅✨ 2️⃣ Season the chicken Mix all spices and coat the chicken well. 3️⃣ Build the pot Place onions at the bottom, add chicken, then parsley and about 2 cups of water. Cover and simmer for 15 minutes. 4️⃣ Add vegetables Layer potatoes, cauliflower, carrots, and eggplant if using. Cook 10–15 minutes until slightly tender. 5️⃣ Prepare the rice Soak rice for 30 minutes, then wash well. Parboiled basmati holds shape best, but regular basmati works too. 🍚 6️⃣ Add rice (do NOT mix) Spread rice over the top. Adjust seasoning of the broth if needed. 7️⃣ Cook Add 6 cups water and butter. Cover tightly with foil and lid. Simmer on medium-low for 20–30 minutes until rice is cooked. 8️⃣ Flip & serve 🤩 Let it rest, then flip onto a serving platter. Lift the pot carefully… and enjoy your Maklouba! 🍚🍗🥔 ⸻ Serve with salad 🥗 or yogurt. Bon appétit! ❤️🇱🇧 #Maklouba #LebaneseFood #MiddleEasternCuisine #BiladAlSham
