PART 1: CATERING PREP — THE PROTEIN 🍗🔥 Catering prep starts before the cooking even begins! Today I’m prepping three different chicken proteins + potato balls for tomorrow’s catering event. 🍗 CHICKEN LEG QUARTERS First, I coated the chicken with garlic, pomegranate molasses, @mina olive oil & honey, balancing the flavors according to my taste buds. Then I smothered it generously with my rub. You really need good olive oil nothing diluted. @mina you can find it on Amazon or your local supermarket! 🔥 THE RUB: • Paprika • 1 tbsp parsley flakes • 1 tsp basil • 1 tsp oregano • 3 tbsp salt • 1 tbsp black pepper • 1 tsp cayenne • 1 tsp chili flakes • 1 tbsp garlic powder • 1 tbsp onion powder • 1 tbsp mustard powder • 1 tsp smoked paprika 🍗 FILLETED CHICKEN BREAST — BEIRUT CHICKEN I keep this one simple because I don’t want to overpower that creamy sauce tomorrow. • Mina olive oil • Lemon pepper • Paprika • Garlic • Chili flakes • Barada Complete 🍗 CUBED CHICKEN BREAST I froze the chicken breasts flat so they were easier to cut, then chopped them into ½-inch cubes and seasoned them with lemon pepper + Barada Complete. 🥔 POTATO BALLS I opened the large cans, strained them and placed them in the refrigerator so they’re ready for tomorrow’s catering event. A little behind-the-scenes catering tip: As a caterer, I buy my meat in bulk from Saad’s Wholesale @SharifaHalalSnacks because they’re reliable, their prices are amazing, and honestly, ordering from them feels like having your own personal employee handling your meat order. 😂 And I’m not just saying that because I’m affiliated. When I genuinely need something for my business, they always do everything within their means to help me get it done. That kind of service matters when you’re feeding a crowd! Part 1 is done… now let’s get ready for tomorrow! 👀🔥 #CateringPrep #LebaneseFood #HalalFood #CateringLife #FoodPrep
