LEMONADE CHICKEN + HERB ROASTED POTATOES 🍋🍗🥔 A fancy meal on a poor man’s budget — literally! 😂🙌 🍋 LEMONADE CHICKEN BRINE For 4–6 lb chicken leg quarters: • 8 cups water • ½ cup kosher salt • ½ cup lemonade powder • 1 head garlic • 1 whole onion • 1 tsp black pepper • Optional: lemon slices + fresh herbs Bring the brine to a boil, then cool completely and refrigerate. Add the chicken to the cooled brine and let it sit overnight, at least 12 hours. When ready to cook, strain the chicken—do not wash it. Pat it dry, rub with Mina olive oil, and season generously. 🍗 CHICKEN SEASONING • 2 tsp salt • 2 tsp lemon pepper • 2 tsp paprika • 1½ tsp onion powder • 1½ tsp garlic powder • 1 tsp Italian herbs • ½ tsp chili flakes Mix and sprinkle evenly over the chicken. Since it’s already brined, use less salt if preferred. 🍗 BAKE THE CHICKEN Bake at 375°F for 40–45 minutes, until browned and cooked through. Make sure the internal temperature reaches 165°F. I got my leg quarters from Saad Wholesale, where they can be around $0.79–$0.99/lb. That’s why this is a fancy meal on a poor man’s budget! 😂 🥔 HERB ROASTED BABY POTATOES I used 5 pounds of multicolored baby potatoes. 1. Parboil for 3–5 minutes, then drain. 2. Toss with: 4 tbsp Mina olive oil 4 tbsp melted butter 4 tbsp chopped parsley 4 tbsp chopped cilantro 4 cloves minced garlic 2 tbsp fresh mint 2 tbsp lemon juice 2 tsp salt 1 tsp black pepper 2 tsp paprika 2 tsp chicken seasoning 1 tsp Vegeta 3. Roast at 425°F until golden and crispy. Convection ovens brown them faster, so keep an eye on them! Serve with my street corn salad, hummus, and a fresh salad. 🌽🥗 The street corn recipe is already on my page, and I posted the hummus recipe yesterday—go grab those too! Fancy dinner without the fancy price tag. 😮💨🔥 #SummersHomemadeMeals #LemonadeChicken #HomeCooking #EasyDinner #ChickenRecipes
