Keeping toddler fed and happy every single day is a bloody mission. Which is exactly why I started meal prepping. This week we're focused on restocking our breakfast options and lunchbox snacks. So future me has a few less things to worry about. First up, we've got fudgy sweet potato and avocado brownies. Sounds weird, right? But trust me, they work. They're rich, toddlers demolish them. Next up, mango and chia pudding. And if you know my son, you know he can't get enough. It's one of the easiest things to meal prep and one of my favourites because it's packed with fibre, healthy fats, protein and omega-3s to help keep my toddlers full for longer. After that, I baked a loaf of hidden veg banana bread. It's one of those recipes I make on repeat because it's freezer-friendly, perfect for breakfast, lunchboxes or snacks and my toddlers have no idea that it's packed with veggies. And last, but not least, raspberry and chia pudding. Bianca calls it Barbie yogurt and Jack loves the variety. Any leftovers go straight into reusable yogurt pouches to reduce waste and save a couple of bucks and have healthy snacks ready to grab and go.
