1 pound of ground beef I have some sweet peppers that need to be used that are leftover and I need to feed a family of 5 so let's go cook some dinner. But this time I'm pulling out the crockpot because it's 9:41 AM the kids are occupied with arts and crafts I'm going to get dinner done now while I have energy and since later I probably won't. So let's do something in the crockpot. I have three sweet peppers that we're gonna cut up and dice up to add to the ground beef. That adds some color. And if I've got sweet peppers, I got to have onion. We added the onion. Some garlic powder, pepper and salt. Now we're just gonna cook her down. While this is cooking, I went ahead and thinly sliced some potatoes. It's still cooking. Grab a bowl, one can of cream of mushroom, half a cup of milk, fourth teaspoon of paprika, dash of pepper and salt. Now mix. I don't own crockpot liners, so I'm gonna go ahead and spray this. And start layering the potatoes at the bottom. I always have problems with potatoes in the crockpot. That's why I did it super, super thin. You could use like frozen hash browns or diced up potatoes, but this is what we're doing. All right, that's what it should look like. The meat is hot coming through. We're gonna use half this mixture on top of the potatoes. And I think we're gonna make it a little bit more cowboy-ish called cowboy casserole. So I'm gonna add a half a can of drained corn on top, just like that. Half of that mixture that we created. And then finally the last of that mixture, drizzled on top. Going to add the lid and we're putting this on low for four to five hours. We'll check the potatoes to see how tender they are. In the mornings that you can check the potatoes throughout the day to make sure they're ready for dinner time. What I say? Let's do four now. Here's your cowboy casserole.
