He goes back to daycare mid September so we’re getting ahead of it now. meal prepping his lunches for the week so mornings aren’t a scramble. Last week I made him some honey glaze carrots and he devoured them so we’re gonna make those for him again. Honey glaze carrots are exceptionally easy to make. I’m just gonna dump some carrots in here. Fill this with water and get them boiling until they're like fork tender. While those are cooking, we'll get everything else prepared. He's gonna do some cheese cubes. These are already cut up so done. For meat, he's gonna do ham for two days, chicken sausage for two days, and meatballs for one day. I know a lot of daycares do provide lunch, but the daycare he's going to does not. But that's okay because with him having celiac, we would have to provide his lunch anyway. So we're at least not paying for food that he's not eating. He normally eats like half a chicken sausage in a sitting so we're just gonna chop up one of these. And then we have the meatballs, they're frozen so we don't have to do anything with those. For fruit, I'm gonna do a mixture of peaches and pears. I know some people get really upset about canned fruit versus fresh fruit, but I like pears as he's eating a balanced diet. So this kid eats better than most adults. So if it's fruit, it's canned. The carrots are fork tender so we'll go ahead and drain them and we'll start working on our honey glaze. I'll start with about half a stick of butter in the pot. Once the butter is all melted down, we're just gonna squeeze in a bunch of honey. And you're just gonna keep on whisking it until it turns into a glaze. All right, this looks good. So let's dump our carrots in. And I cut the carrots into like bite size pieces. Stir this all together until everything is coated with the glaze. There we go. Honey glazed carrots.
