We're gonna meal prep my wife some lunch this week. We're doing BBQ chicken over rice with mixed veggies. This meal is incredibly simple. It's something that we used to make almost every day of the week when we first started dating because we had next to no money and it was super cheap. One cup rice, two cups water. And we're gonna throw the whole bag of mixed veggies right in the pot with the rice. I do not rinse my rice. Rinse your rice if you want to rinse your rice. I don't want to. I'm gonna add a little bit of salt, onion powder, garlic powder, and pepper. And we'll throw like a tablespoon or so of butter in there because why not? We'll throw this on the stove and then work on our chicken. We've got four chicken thighs here. I've trimmed off the fat and now we're going to season them. We're gonna do just a little bit of salt. And then we're gonna go pretty heavy with the smokey mesquite. That. Pat that in. Flip 'em and do the other side. Don't worry, I'm washing my hands in between before I touch the seasonings. Just because I don't put something in the video doesn't mean I didn't do it. I'll throw down some olive oil. Get this on like a medium-high, closer to a high heat. We're gonna get a hard sear on both sides and finish them off in the oven. If you like these pans, they are in my Amazon storefront. If you use that, you don't have to use that though. The oil is hot, so let's get our chicken going. Give the chicken a flip. Now these have a hard sear on both sides. We're gonna take them out and put them in the oven until they reach an internal temp of 165. Make sure to save everything that's in that pan. I'm also gonna put just a splash of chicken broth in here to keep them nice and moist. I put my oven on 400 for this. I don't think it really matters all that much. Do 350, do 425, just don't do it super high because it could dry out. The chicken is done, so we'll slice it up and we'll be ready to get everything in the containers. No worry, I cleaned the cutting board and the tongs. And then our chicken. And top it off with some Sweet Baby Ray's barbecue sauce. There we go. Barbecue chicken over rice with mixed veggies.
