DINNERS FOR REAL LIFE, EP.18 — MONGOLIAN CHICKEN LO MEIN The Mongolian beef went viral, so you know we had to make the chicken version. Tender chicken, broccoli, carrots, and wide lo mein noodles tossed in that sweet and savory Mongolian-style sauce. Another easy dinner for a busy night. INGREDIENTS: * 2 lbs boneless, skinless chicken thighs * 1 large head broccoli, cut into florets * 2 cups shredded carrots * ½ cup low-sodium soy sauce * ½ cup chicken broth * ⅓ cup packed brown sugar * ¼ cup hoisin sauce * 1 tbsp minced garlic * 1 tsp ground ginger * 1 tbsp sesame oil * 1 tbsp sriracha, optional * 2 tbsp cornstarch * 2 tbsp cold water * 12 oz wide lo mein noodles * 1 ladle reserved pasta water * 3–4 green onions, sliced * 1 tbsp sesame seeds * Chili crisp or chili oil, optional DIRECTIONS: Add chicken, soy sauce, chicken broth, brown sugar, hoisin, garlic, ginger, sesame oil, sriracha, and carrots to the Crockpot. Cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and cooked through. Break the chicken into bite-size pieces. Mix 2 tbsp cornstarch with 2 tbsp cold water and stir it into the Crockpot. Add the broccoli and cook until tender. Meanwhile, cook 12 oz lo mein noodles in a pot of salted water according to the package directions. Before draining, add 1 ladle of the pasta water to the Crockpot. Drain the noodles, add them to the Crockpot, and toss everything together until coated in that glossy Mongolian sauce. Finish with green onions, sesame seeds, and chili crisp if you like some heat.
