500 g all-purpose flour 365 g water 100 g active starter 10 g salt Mix everything together until no dry flour remains. Cover and rest 30 minutes. Do 3–4 sets of stretch-and-folds about 30 minutes apart, then let bulk ferment until the dough looks puffy, airy, and has risen roughly 50–75%. Shape, place in a floured banneton, cover, and cold proof overnight. Bake at 450°F in a preheated Dutch oven for about 25–30 minutes covered, then 15–20 minutes uncovered until deeply golden.
