I think I may have ruined store-bought English muffins for my family. 😂 These homemade English muffins turned out SO GOOD—and they were much easier than I expected! My kids started eating them before I could even turn them into what I actually made them for. 😂❤️ HOMEMADE ENGLISH MUFFINS • 2 1/4 tsp yeast • 1 1/4 cups warm evaporated milk • 2 Tbsp honey • 3 cups flour • 1 tsp salt • 3 Tbsp melted butter • 1 large egg • Cornmeal for dusting Whisk together the yeast, warm evaporated milk and honey. Let sit for about 10 minutes to proof. Add flour, salt, melted butter and egg. Mix until the dough pulls away from the sides of the bowl. Transfer to a greased bowl, cover and let rise for about 1 hour, or until doubled in size. Turn the dough onto a lightly floured surface, knead briefly and roll approximately 3/4–1 inch thick. Cut into 3-inch circles—I just use a drinking glass! Place on a baking sheet, dust with cornmeal, cover and let rise another hour until doubled and puffy. Heat a cast-iron skillet and cook the English muffins for about 3 1/2 minutes on the first side, watching carefully so they don’t get too dark. Flip and cook another 3 1/2–4 minutes, until beautifully golden brown and cooked through. And voilà—homemade English muffins! 😍 I managed to save enough before my kids ate them all to make ham, egg & cheese breakfast sandwiches.
