HASSELBACK POTATOES

INGREDIENTS
4 medium russet potatoes
4 tbsp butter, melted
3 cloves garlic, minced
1/4 cup Parmesan, finely grated
1 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
HOW TO MAKE IT
1. Preheat oven to 425°F.
2. Cut thin slices across each
potato, stopping before
cutting completely
through.
3. Mix melted butter and garlic.
4. Brush potatoes generously with garlic butter, including
between slices.
5. Season with salt and black pepper.
6. Bake 50-60 min, brushing again with butter halfway through.
7. Sprinkle with Parmesan; bake 5 min more and finish with parsley.

CRISPY PARMESAN
POTATO STACKS
Makes about 4 servings
INGREDIENTS
2 lb Yukon Gold potatoes,
thinly sliced
3 tbsp butter, melted
1/2 cup Parmesan, finely grated
2 cloves garlic, minced
1 tsp fresh thyme
1/2 tsp salt
1/4 tsp black pepper
HOW TO MAKE IT
1. Preheat oven to 400°F and
grease a muffin pan.
2. Slice potatoes very thinly.
3. Toss with melted butter, garlic, Parmesan, thyme, salt
and pepper.
4. Stack potato slices vertically in muffin cups.
5. Cover loosely with foil and bake 30 min.
6. Remove foil and bake 20-25 min until golden and crisp.
7. Cool 5 min, remove stacks and serve.

INGREDIENTS
2 lb baby Yukon Gold potatoes
2 tbsp olive oil
1 cup cheddar, shredded
6 slices bacon, cooked and
chopped
1/4 cup sour cream
1/4 cup green onions, sliced
1/2 tsp salt
1/4 tsp black pepper
HOW TO MAKE IT
1. Boil potatoes 15-20 min
until fork-tender.
2. Drain and cool for 5 min.
3. Place on a sheet pan and gently smash.
4. Brush with olive oil; season with salt and pepper.
5. Roast at 425°F for 25 min until crispy.
6. Top with cheddar and bacon; bake 5 min more.
7. Finish with sour cream and green onions.

2. Cut each potato lengthwise
into wedges.

pepper.
5. Arrange skin-side down on a sheet pan.

2 lb baby potatoes, halved
6 slices bacon, chopped
2 tbsp olive oil
2 tbsp honey
1 tbsp hot sauce

1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
HOW TO MAKE IT
1. Preheat oven to 425°F.
2. Toss potatoes with olive oil,

4. Scatter chopped bacon around potatoes.
