Welcome to Soups That Don't Suck.
Episode 61. We're making a spicy short rib brothy rice bowl.
The broth is a silky coconut curry base with the perfect amount of spice.
and the short ribs just melt in your mouth.
This is definitely my dream comfort food kind of meal.
Start by seasoning the short ribs with salt and then searing on all sides.
I'm doing this in a pressure cooker to save some time.
The red curry paste is next.
Fry that a little. Then shallots, ginger, and garlic.
Next we're gonna add the ribs back in,
along with a touch of soy sauce,
some beef stock, fish sauce,
and then finally some brown sugar.
Pressure cook this on high for 45 minutes,
then let it release naturally.
We're gonna shred the meat from the short ribs
and then, okay.
back to our broth. So strain out the aromatics.
Finish with coconut milk so it's nice and creamy.
The broth goes over the rice and beef,
and then we're gonna garnish with green onions
and sesame seeds.

A couple years ago, I got to work with a Thai chef (Jam Sanitchat) who taught me her yellow curry, and I’ve been so in love with it and making it at home ever since. This is my take on a Thai curry broth, using red curry paste, poured hot over rice with these fall apart tender short ribs.
