Creamy poblano corn chowder 🌽 SOUPS THAT DON’T SUCK / episode 62 this is a cozyyyyyy one. I feel like I’m going to make this all soup season long. But it’s also a great transition into soup season as well because it feels summery with the corn and poblanos. There’s no cream in here, just a block of Boursin cheese stirred in at the end (which does magical magical things if you ask me) flagging that it’s also what I like to call a garnish-dependent soup. that is, if you ladle up bowls of it without the garnishes, it looks and feels a little naked and personally I think it’s begging for the crushed tortilla chips, the green onions, the extra charred corn and poblanos with some lime. avocado would be super good here as well. the full recipe is up on the blog! link is in my bio xx #soupsthatdontsuck #comfortfood #cornchowder #souptok #soupseason
