Welcome to Soups That Don't Suck. Episode 60. This is such a comforting one. It's my creamy French onion ditalini soup, and it's topped with some gruyere crisps for some texture. We're gonna start with some butter and olive oil in a pot over medium heat. Add in two chopped onions. First, we're gonna season with some salt to help draw out the moisture. Then cover for 5 to 10 minutes until the onions are softened. This is just gonna help speed up that caramelizing process a little bit. Keep going till they're golden like this. Then in between, we make our crisps using shredded gruyere cheese and some black pepper. That's it. These bake until golden. Okay, back to our onions. Deglaze with a little balsamic vinegar, add in the ditalini pasta, stir, and then pour in your beef stock, a sprig of thyme. Then cook till the pasta is tender. At the end, we're gonna finish with some cream, then ladle it up into bowls with those cheesy crisps on top. Little more cream and chives. That's it. Hope you like it.
