Here's how I made this loaded caramel apple cheesecake. Melt butter. Cook diced and peeled apples. Once they're almost cooked and release a lot of moisture. Add light brown sugar. Cinnamon. Cook this until it's thick enough to leave a clean path. Let this completely cool. Combine biscoff cookies with cinnamon graham crackers. Crush. Add melted butter. And mix. Dump this into a 9-inch springform pan. Greased and lined with parchment paper. Pack this down. Making sure you build a wall around the edges. Like this. Freeze this. For the filling. We're doing cream cheese. Mix. Until creamy. Add mascarpone. Add sour cream. Add powdered sugar. Light brown sugar. Cinnamon. Vanilla. And mix. Until smooth. Add cream I whipped up earlier.
