Sweet Potato Elote Beef Bowls 🌽🤝 One of my favorite meal preps I’ve made in a WHILE. So much flavor + packed with protein & fiber! Makes 5 servings 461 cal | 32g protein | 59g carbs | 10g fat | 14g fiber INGREDIENTS Sweet potatoes: • 3 medium sweet potatoes (693.5g) • Avocado oil spray • Salt • Garlic powder • Thyme Beef mixture: • 1 lb 96/4 extra lean ground beef (16 oz) • 1 can no-salt-added pinto beans (439g) • ½ packet @Siete Foods mild taco seasoning (~3.5 servings) Elote corn: • 1 bag Birds Eye Fire Roasted Corn (12 oz / 340g) • 1 jalapeño, diced + seeds removed • 1 single-serving cup @Good Culture low-fat cottage cheese (150g) • 2 tbsp cotija cheese (16.5g) • 2 tbsp chopped cilantro • 1 tbsp lime juice (or juice of ~1 lime) • Garlic powder HOW TO MAKE Dice the sweet potatoes, spray with avocado oil + season with salt, garlic powder and thyme. Roast at 425°F for 25–30 minutes. Spread the frozen corn onto a parchment-lined sheet pan and roast at 425°F for 10 minutes. Brown the ground beef until almost cooked through. Add the pinto beans + taco seasoning and finish cooking together. For the elote corn, mix together the roasted corn, jalapeño, cottage cheese, cotija, cilantro, lime juice + a sprinkle of garlic powder. Divide everything evenly between 5 containers — sweet potatoes, beef + bean mixture, then the elote corn right on top.
