Never go back to regular chicken noodle soup once you try this Italian penicillin when you're sick. I like to call this liquid gold. It is truly healing medicine. This is one of my favorite recipes because you just throw everything right into a big pot. I dice up onion, celery, carrot, and a handful of garlic. Regular chicken broth is just fine, but I decided to use this chicken bone broth for the added benefits. I ended up using two cartons to completely cover the veggies. This is the most important part, a parmesan rind. This gives the soup so much flavor. Ground turmeric for color and benefits, better than bouillon chicken. I added two bay leaves and some freshly cracked pepper. Covered it on high and let it come to a boil. The star of the show is the pastina. It's a very small pasta, this one from Target. After it was cooked, I added two tablespoons of butter and some fresh parmesan. I normally like to add an egg as well. I know it sounds weird, but don't knock it till you try it. Once the pasta was done, I set that aside and the veggies should be fork tender by now. I removed the parmesan rind and the two bay leaves and transferred all the veggies to a blender with a little bit of liquid. Once it was all blended, I transferred it back into the pot and let it simmer on low for a little bit. Such a gorgeous color. It is truly liquid gold. I really believe that food is medicine and one of my favorite hacks is to freeze some of this broth so next time I'm sick, it's a little bit easier to just reheat the soup and have it on hand. Then I added the pastina to a bowl and topped it with the soup.
