QUESO STEAK FAJITA RICE RECIPE✨ INGREDIENTS •Strip steak or flank steak (we did 2lbs, but however much you need to feed your family, just adjust your seasonings based off the amount) •1 container/jar of your favorite queso (we love @Gordo’s Cheese Dip ) •2 bell peppers sliced •1 medium white onion sliced •1/4c. water •1c. white rice •tbsp. olive oil •1 packet of taco seasoning (or just use what’s in your pantry already!) •1-8oz. can of tomato sauce •2c. chicken broth •cilantro for garnish RECIPE: •start by slicing your veggies and sauté in olive oil for about 5-7min. •After about 5 mins, throw in 1/4c. of water, place a lid on your pan and place on medium heat to help the veggies break down. (If you like a firmer veggie, skip this step) •once your veggies are soft, toss in your rice and toast for about a minute •add in your seasoning and stir •once partially combined, add in your tomato sauce and chicken broth and stir •place the lid on your pan again and simmer for about 12-15mins or until rice is fully cooked. •in a separate pan, fry up your steak in a little olive oil to temperature preference. •once steak is cooked, place steak on the fajita rice mixture •top with warmed up queso, cilantro for garnish and enjoy! **if you don’t want to use a taco seasoning packet, generally I sub that out for a homemade seasoning mix with pantry staples. I find it’s cheaper and doesn’t have all the preservatives: tbsp. chili powder, 1/2tbsp. cumin, S&P to taste, tsp. paprika, tsp. garlic powder, tsp. onion powder. ***I marinated our steak ahead of time but that is not necessary. However if you want to add that step I did a generous amount of S&P, tbsp. minced garlic, tbsp. olive oil, and tbsp. lime juice.
