5 minutes to assemble my lunch for work before I have to leave. Let's do it. Little disposable container, I get these off Amazon. They just make my life literally so much easier. You can microwave them, you can do whatever you want. I just don't like having to clean the Tupperware at work. Like, it will literally stop me from bringing lunch. I know it's a bad habit. It is what it is. Same formula every single time to make your life easier. Two leaves, greens of your choice. I typically do an arugula and we're doing arugula this week. Just stuff it. Like, literally stuff it full. And for some variety and texture, my favorite is a coleslaw mix. I don't like actual coleslaw, but the little like cabbage mixes, it's just purple and green cabbage and some shredded carrots. And it just adds a little like different texture in your salad. Just stuff it to the brim. I need a work lunch that will keep me full, but not make me feel like I need to go take a nap. And for protein, choose your favorite. Today, I am doing a chicken tender. These are actually from Cali'flour and they're the spicy ones. If you're gluten-free, they are so good. I just air fried three of them, took literally like 7 minutes, and I am just giving them a very, very rough chop. No precision here. Literally so easy. All of that chicken, oops, is going in. Star of the show is dressing. I think people go wrong with dressing when they make salads on the go. And here are your two problems. One, you obviously can't dress your salad before you leave because it's going to be mushy and gross and nobody wants to eat that. Two, well, one, sorry, solve little containers. There's also non-disposable ones that I'm sure you can get, but it's fine. Two is the wrong dressing. This is Sunny Fun Foods. This is my absolutely favorite brand of dressings to take with me for lunch. This flavor is Scallion Ranch. I tried it for the first time last week and happy to say, it's incredible. I really love the Miso Caesar, but with like the spicy chicken tender, the Scallion Ranch is going to be perfect. They're like better for you dressings. What more could you want? This is literally it. No fuss. This took me 4 minutes and 10 seconds. And now I gotta go.
