Divine. #chipswineanddip #birthdaydip #easyentertaining #newzealandfood #dipseason Recipe: 34th Birthday Whipped Ricotta Dip Roasted garlic 1 bulb garlic Olive oil Salt Cut the bulb in half, drizzle with oil and salt, wrap in foil, roast at 180°C for about 40 minutes until soft and golden. Whipped base 1 cup ricotta 1 cup cream cheese 3 tbsp pesto Roasted garlic (squeezed from skins) Zest of 1 lemon Juice of 1 lemon Salt and pepper to taste Whip everything together until smooth. Roasted tomato topping Cherry tomatoes (a couple of large handfuls) Olive oil Honey, a drizzle Zest of 1 lemon A few basil leaves Salt and pepper Toss and roast at 180°C for about 30 minutes until blistered and jammy.l
