MONGOLIAN BEEF UDON STIR-FRY 🥩🍜 On my weight loss journey to losing over 50 pounds, this noodle dish made it so easy to stay on track — it’s high-protein, quick to put together, and honestly tastes so good 🤤 FULL RECIPE ↓ Ingredients: 175g lean ground beef 1 pack udon noodles ½ red onion 4 bulbs baby bok choy 2 stalks green onions (whites & greens separated) 2 garlic cloves, minced Salt & pepper to taste For the sauce: 1 tbsp soy sauce 1 tsp dark soy sauce 1 tbsp mirin 1 tsp sriracha How to make it: Prep your aromatics and veggies by mincing the garlic, separating the whites and greens of the green onions, chopping half a red onion, and cutting your bok choy into stems. Combine soy sauce, dark soy sauce, mirin and sriracha, then mix until smooth. Heat a pan over high heat and spray with cooking oil. Add your ground beef, making sure not to overcrowd the pan, and let it sit until a crust develops. Add your aromatics and cook until fragrant. Remove the beef, then add the red onion and baby bok choy to the same pan and cook until wilted. Add the cooked udon, ground beef and sauce. Stir-fry for 2–3 minutes until everything is evenly coated. Top with green onions and ENJOY! 🍜🔥 TOTAL MACROS: 619 cals | 72g C | 17g F | 47g P Save this for the next time you’re craving noodles and want something high-protein & quick to put together ✅ #udon #easymeals #highprotein #healthyrecipes #asianrecipes
