Creamy, cheesy, packed with protein AND veggies. 🙌🏼 This Chicken Primavera Bake is such an easy weeknight dinner! Eat it as-is or serve it over pasta for an extra hearty meal. ❤️ Creamy Cheesy Chicken Primavera Bake 🥦🧀 Makes 6 servings Ingredients: • 4 cups cooked shredded/chopped chicken (about 1½ lbs)* • 2 cups broccoli florets • 1 zucchini, sliced • 1 red bell pepper, chopped • 1 large carrot, thinly sliced • 3–4 cloves garlic, minced • 1 tsp olive oil or cooking spray Sauce: • 16 oz low-fat cottage cheese • 2 cups whole milk • ½ cup grated Parmesan • 2–3 cloves garlic, minced • 1 tsp Italian seasoning • ½ tsp each onion & garlic powder • Black pepper + adobo/all-purpose seasoning, to taste • ¼ tsp crushed red pepper, optional • 1 tsp lemon zest Topping: • 6 oz light shredded mozzarella • Parmesan, black pepper + fresh parsley/basil Preheat oven to 400°F. Sauté broccoli, zucchini, pepper & carrot until beginning to soften. Add garlic and cook until fragrant. Add sauce ingredients and stir until creamy. (You can blend the sauce first if your cottage cheese has larger curds. I use Good Culture, which melts down easily, so I skip this step!) Stir in chicken, then transfer to a greased casserole dish. Top with mozzarella and bake 20–25 min, until hot & bubbly, broiling for a few minutes at the end. Finish with Parmesan, black pepper & fresh herbs. Serve as-is or over your favorite pasta! *I used a large rotisserie chicken. If cooking your own, start with about 2 lbs raw boneless chicken and measure out 4 cups once cooked.
