Ingredients: - 2lb block of mozzarella cheese - 1 cup flour - 3 eggs (beat more if you run out) - 2 cups panko bread crumbs - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp smoked paprika - 1/2 tsp cayenne - 1/2 tsp black pepper - 1/4 tsp salt Hot honey sauce: - 1/2 cup unsalted butter - 1 tbsp brown sugar - 1/3 cup honey - 1 tsp paprika - 1 tbsp hot sauce, optional Chill in freezer for 15-30 minutes before frying Fry at 350 F for 3-4 minutes Makes 8 sticks Instructions: Start with a block of mozzarella and cut it into eight sticks. I recommend using a low-moisture mozzarella block rather than fresh mozzarella since it holds its shape better when fried. Set up three bowls with flour, beaten eggs, and panko. For the panko, mix in the garlic powder, onion powder, smoked paprika, cayenne, black pepper, and salt. Dip each mozzarella stick into the flour, then the egg, and the seasoned panko. Make sure they’re completely coated, especially around the edges. Dip each one back into the egg and panko for a second coating. This extra layer helps keep the cheese from escaping while frying.
