Molten Chocolate Lava Cake Ingredients: - 1/2 cup unsalted butter - 6oz semi-sweet or bittersweet chocolate, chopped - 2 large eggs - 2 large egg yolks - 1 tsp vanilla extract - 1/4 cup sugar - 1/4 tsp salt - 2 tbsp flour - 1 tsp espresso powder Bake at 450 F for 8-10 minutes in ramekins Makes 4-6 servings (depends on ramekin size) Instructions: Grease your ramekins well and dust them with a little flour or cocoa powder. Melt the butter and chopped chocolate together until completely smooth over a double boiler. Or you can do this in the microwave in short intervals, stirring between each one. In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt. Whisk until everything is smooth and slightly thicker and lighter in color. The extra egg yolks help give the lava cake a richer, more custardy center. Add the flour and espresso powder into chocolate mixture, and mix just until combined. The espresso powder isn’t there to make it taste like coffee—it just helps enhance the chocolate flavor. Slowly pour the melted chocolate mixture into the egg mixture and whisk until smooth, but make sure not to overmix. Divide the batter evenly between four to six ramekins, depending on their size. Bake at 450°F for about 8 to 10 minutes. The edges should be set, but the centers should still look slightly soft and jiggly. And this is where you really don’t want to overbake them. Let them rest for a minute, then carefully flip them onto a plate. #chocolate #cake #dessert #EasyRecipe #easydessert
