30g protein & no protein powder 😎 (recipe in caption) Breakfast prep is so much easier when the thing in your fridge is something you actually want to eat! This is my protein dutch baby (aka a fancy protein pancake)! It puffs up like a soufflé, comes out custardy, and one pan covers 4 breakfasts. Top it with skyr + frozen berries and you’ve got 30g before you’ve even thought about the day. “I have had this for the last 4 days! It is so filling and tasty!” ingredients: * 1 cup all-purpose flour (or 1:1 gluten free flour) * 1 cup cottage cheese (blended (full-fat plain Greek, Skyr yogurt, or plant based yogurt work too)) * 6 eggs * 1 teaspoon vanilla * 4 teaspoon salted butter (unsalted is fine, plant based is fine too) * 1 pinch salt Toppings: * 3 cups berries * 1.5 cups yogurt of choice (I prefer Greek, Skyr, or plant-based) how to make: 1. Preheat oven to 425°F. Place 4 tsp of butter in an 8x14-inch pan and heat in the oven for 3 minutes to melt. 2. Blend 1 cup flour, 1 cup cottage cheese, 6 eggs, 1 tsp vanilla, and a pinch of salt for about 45 seconds. 3. Pour the batter into the hot pan and bake for 17-20 minutes. it'll puff way up and crack like a soufflé, then settle as it cools down. 4. Remove from the oven, top with 3 cups frozen mixed berries and 1.5 cups Skyr yogurt (split between each slice) and enjoy! leftovers keep 5 days, so it's also one of my favorite meal prep breakfasts too!
