Yes, this is a lot of food. Yes, I eat it all in one sitting. That's kind of like the whole entire point because I make it a high volume meal, so it's a lot of food for low calorie to help support me on my weight loss goals. Taco salads are genuinely one of the most versatile, tastiest calorie deficit foods that I discovered and I have eaten this multiple times through my 140 pound weight loss journey and it's one of the meals that I genuinely never ever ever get tired of. I start with a giant lettuce base, shredded lettuce, spring mix, whatever type of lettuce, I don't care. And then go in with whatever meat you want. This is a lean ground beef. I also do it with ground chicken, with grilled chicken, ground turkey, whatever your protein source is, season it however you like it. This just has taco seasoning on it. And then we're going in with plain Greek yogurt. I use about a half a cup or so. This is my replacement for sour cream. When you mix it all together, you put the taco sauce on there, you can't tell, okay? You could also blend up cottage cheese if you wanted that. And you can customize this literally however you want. I made some fresh pico and I just did cilantro, tomatoes and onions. We're going to throw a chunk of that on there. I've got some other salsa that we're going to throw a little bit of that in there. There's like basically no calories in the salsa or the pico, so you know, jack it up. And some mild taco sauce. If you wanted to put hot sauce on it, go right ahead. Just a little bit of crunch. We have the Quest protein chips. Crunch those up. Adds in an extra 19 grams of protein and I just love the crunch that it gets. And we're going to shake it all up.
