INGREDIENTS | SERVES 4–6 Chicken & Vegetables - 1½ lbs yellow potatoes, halved and cut into quarters - 2 bell peppers, sliced - 2 zucchini, halved and sliced - 1 red onion, sliced - 1½ lbs chicken, cut into 1-inch pieces (breast, thighs, or a combination) Marinade - ⅓ cup olive oil - Juice of 1 lemon - 3 garlic cloves, minced - ¼ cup chopped parsley - 1 tablespoon red wine vinegar - ½ tablespoon dried oregano - ½ tablespoon paprika - 1 teaspoon garlic powder - 1 teaspoon onion powder - 1 teaspoon salt - 1 teaspoon black pepper For Garnish - Cherry tomatoes, halved - Lemon slices - Chopped parsley - Fresh dill - Tzatziki sauce - Crumbled feta cheese DIRECTIONS 1. Preheat oven to 425°F 2. Arrange the potatoes, bell peppers, zucchini, red onion, and chicken in a single layer on a large sheet pan. Spread everything out so it roasts instead of steams 3. In a bowl, whisk together olive oil, lemon juice, garlic, parsley, red wine vinegar, oregano, paprika, garlic powder, onion powder, salt, and black pepper until well combined 4. Pour the marinade over the chicken and vegetables, then toss until everything is evenly coated 5. Roast for 35–45 minutes, stirring halfway through, until the potatoes are tender and the chicken is golden and cooked through 6.
