CHIMICHURRI STEAK LOADED POTATO NACHOS Serves 2 For the Chimichurri Steak • 2 steaks of choice • Salt & black pepper Chimichurri Sauce ⁃ 1tbsp red wine vinegar ⁃ 1.5tbsp olive oil ⁃ 1 finely diced shallot ⁃ Large handful fresh parsley, finely chopped ⁃ 2 crushed garlic cloves ⁃ ½ tsp dried oregano ⁃ 1 small diced chilli ⁃ Salt & pepper For the Potatoes ⁃ 500g maris piper potatoes ⁃ 1 tsp Aromat, smoked paprika & roast potato seasoning Other Toppings ⁃ 60g grated mozzarella cheese ⁃ crumbled feta cheese ⁃ Fresh parsley, chopped ⁃ Garlic yoghurt (optional) METHOD 1. Thinly slice the potatoes into even discs, add to a bowl with all of the seasonings, and then spread them across a baking tray. Spray lightly with oil and bake at 190°C for 20–25 minutes, until softened and lightly crisp around the edges. 2. Make the chimichurri by mixing together all of the ingredients. Set aside to allow the flavours to develop. 3. Season the steak with salt, and pepper. Heat a frying pan over high heat and cook for 2–4 minutes, depending on thickness and preferred doneness. Remove from the pan, rest for 5 minutes, then slice thinly. 4. Once the potatoes are cooked, sprinkle with the mozzarella. Return to the oven for 5–8 minutes, until the cheese has melted. 5. Remove from the oven, place the steak over the top, generously drizzle with the chimichurri sauce, scatter over the feta and garlic yoghurt and serve immediately. #chimichurristeak #potatonachos #steaknachos #EasyRecipes
