Smoky Sun-Dried Beef & Chorizo Pasta Serves: 2 large portions Ingredients * 250g 5% fat beef mince * 50g chorizo, diced * 150g dried pasta * 1 shallot, finely diced * 2 garlic cloves, crushed * 2 tbsp tomato purée * 1tbsp chilli jam (optional but it’s add a hint of sweet and spice) * 35g sun-dried tomatoes * 50ml reduced-fat double cream * 15g grated Parmesan * 100ml reserved pasta water * 1 tsp smoked paprika & garlic pepper * ½ tsp thyme & oregano * ¼ tsp chilli flakes (optional) To Finish * Fresh parsley, chopped * Garlic bread Method 1. Bring a large pan of salted water to the boil and cook the pasta according to the packet instructions. Before draining, reserve around 100ml of the pasta water. 2. Meanwhile, heat a large frying pan over a medium heat with low-calorie spray. Cook the shallot for 3–4 minutes until softened, then add the garlic and cook for another 30 seconds. 3. Add the diced chorizo and cook for 2–3 minutes until it releases its oils. 4. Add the beef mince and cook for 5–6 minutes, breaking it up with a spoon until browned. 5. Stir in the tomato purée and cook for 1–2 minutes until it darkens slightly. This gives the sauce a richer flavour. 6. Stir in the seasonings & chilli jam if using. Cook for another minute until fragrant. 7. Add the chopped sun-dried tomatoes and the reserved pasta water. Stir well and let everything simmer for 2–3 minutes. 8. Reduce the heat to low and stir in the cream followed by the grated Parmesan. Mix until smooth and creamy. 9. Add the drained pasta and toss everything together until the pasta is coated in the sauce. If needed, add a splash more pasta water to loosen the sauce. 10. Taste and adjust the seasoning. 11.
