Ad CHEESIEST CAJUN BBQ CHICKEN TACOS 🌮🧀 The ultimate cheesy chicken tacos using @Cathedral City Serves 2 Ingredients For the chicken ⁃ 300g chicken breasts strips ⁃ 1 diced red pepper ⁃ 1 diced red onion ⁃ 200g passata ⁃ 40g BBQ sauce ⁃ 100ml chicken stock ⁃ Splash of Worcestershire sauce ⁃ 1 tbsp BBQ seasoning, Cajun seasoning & chicken seasoning To serve ⁃ 6 mini tortillas ⁃ 100–120g Cathedral City Mature Cheddar, grated ⁃ Fresh parsley ⁃ Cajun mayo Method Season the chicken breasts strips with the BBQ seasoning, Cajun seasoning & chicken seasoning. Heat a large frying pan over a medium-high heat with a few sprays of oil. Sear the chicken for 3–4 minutes on each side until nicely browned. In the same pan, add the sliced onion and red pepper for 5–6 minutes until softened. Pour in the passata, BBQ sauce and chicken stock, stirring well. Bring to a gentle simmer cover with a lid for 8-10 minutes, or until the chicken is fully cooked. Remove the chicken, shred with two forks, then stir it back into the sauce with the peppers and onions. Give each tortilla a quick dip in the chicken sauce (don't soak them), place the tortilla onto the hot griddle pan or baking tray, then fill with a generous handful of Cathedral City cheddar, the chicken mixture, another sprinkle of cheese. Then fold them over. Lightly spray the tops with oil and bake for 8–10 minutes, until the tacos are crispy and the cheese is perfectly melted.
